Production of olive oil

To ensure excellent quality, olive oil has to be produced with carefully planned steps and methods.

Olive fruit harvesting is done by hand, a difficult and long lasting procedure.

This harvesting has to be done at the optimal time frame. To obtain its best attributes, the olive must not be unripe or too mature. The day’s harvested crop is then sent immediately to the oil press where it is being processed in cool temperatures (by no means higher than 25˚-27˚ C).

The extract is finally cleaned, filtered and stored in inox tanks, where it cannot come in contact with air, in order to avoid oxidation.
